    Catering

    In KS4 Catering we study the following :

    • improving practical skills and also knowledge and understanding of the Catering industry as well as gaining a Food Hygiene qualification
    • costing and portion control
    • food preparation
    • nutrition and menu planning
    • cooking and presentation
    • communication and record keeping
    • specialist equipment
    • environmental considerations   

    Assessment :

    • two practical exams and a written exam completed at the end of year 11
    • the first practical exam is completed at the end of year 10 and equates to 20% of the overall GCSE grade
    • the second practical exam is complete before Easter in year 11 and makes up 40% of the final grade
    • the written exam, completed at the end of year 11, makes up the final 40% of the GCSE Catering qualification
    • peer and self-assessment, using the exam board's assessment objectives is a fundamental part of the course

    Learning beyond the classroom :

    • preparation and practice of dishes is vital in the lead up to formal practical assessment
    • reading around meal planning and preparation to aid knowledge and understanding of the subject
    • visiting restaurants and other hospitality and catering establishments to develop awareness of the industry and the employment opportunities available
